I want to share my 3 newest photographs that I listed in my Etsy shop (www.dragonfly.etsy.com). All comments, critiques, and dry sarcasm is welcome as always.
This doll was in the Appalachian Museum in Cinton, TN. It was so sad and worn-out that it almost had a gothic quality – like it had the darkest story to tell. It reminds me of an old Michael Jackson song from the HIStory album called “Little Susie”:
“Somebody killed little Susie The girl with the tune, Who sings in the daytime at noon. She was there screaming, Beating her voice in her doom, But nobody came to her soon. A fall down the stairs, Her dress torn, Oh the blood in her hair. A mystery so sullen in air. She lied there so tenderly, Fashioned so slenderly, Lift her with care, Oh the blood in her hair.”
For many years, people from all over the United States and the world have enjoyed the culinary creation of Corbin’s most famous citizen — Harland Sanders, known worldwide as Colonel Harland Sanders. This is a photograph of the world’s very first KY Fried Chicken!
Peacocks are large, colorful pheasants (typically blue and green) known for their iridescent tails. These tail feathers, or coverts, spread out in a distinctive train that is more than 60 percent of the bird’s total body length and boast colorful “eye” markings of blue, gold, red, and other hues. The large train is used in mating rituals and courtship displays. It can be arched into a magnificent fan that reaches across the bird’s back and touches the ground on either side. Females are believed to choose their mates according to the size, color, and quality of these outrageous feather trains.
So, does that mean he was hitting on me?
Quick Recipe of Vegan Awesomeness for the Holidays

Vegan Shepherd’s Pie with Gravy
Adapted from Choosing Raw.
Yield: 6 generous servings
Ingredients:
Mashed Potatoes
- 3 lb. potatoes (I used a bag of organic red potatoes), peeled and chopped
- 2 tbsp Earth Balance, or equivalent
- 1/3 cup + 2 tbsp non-dairy milk (I used soy)
- 1 tsp kosher salt, or to taste
- Freshly ground black pepper, to taste
- 1/2 tsp garlic powder
Vegetable Filling:
- 2 tbsp extra virgin olive oil
- 1 yellow onion, finely chopped
- 3 cloves garlic, minced
- 4 medium carrots, peeled & small dice
- 2 parsnips (or other root vegetable), peeled & small dice
- 4 celery stalks, small dice
- 1 cup, full sodium vegetable broth (or more as needed)
- 1/4 cup red wine (or more broth)
- 2 tsp dried thyme
- 1/2 tsp Italian seasoning
- 1/2-3/4 tsp kosher salt, to taste + black pepper
- 3 tbsp flour (I used whole wheat)
Suggestion: Serve with Homemade Vegan Gravy.
Directions:
1. Preheat oven to 425F and lightly oil a 2.5 quart/2.3 litre casserole dish. Place peeled and chopped potatoes into a large pot and add water, 2 inches above potatoes. Bring to a boil and then simmer on low for about 30 minutes until very tender.
2. Meanwhile, prepare the vegetable filling. Chop the onion and mince the garlic and add to a skillet along with the oil. Cook on low for about 5-7 minutes. Now add in the chopped carrots, parsnip, and celery. Cook on medium-low heat for about 15 minutes.
3. When the potatoes are done cooking, drain and add back to the pot. Add the Earth Balance (or butter), milk, and seasonings and mash well. Set aside.
4. In a small bowl, whisk together the liquid ingredients (broth, red wine (optional), thyme, and flour). Add this liquid mixture to the vegetables in the skillet and stir well. Add your salt and pepper to taste. Cook for another 5-10 minutes or so until thickened. Season to taste.
5. Scoop vegetable mixture into casserole dish. Spread on the mashed potato mixture and garnish with paprika, ground pepper, and Thyme. Bake at 425F for about 35 minutes, or until golden and bubbly. Allow to cool for at least 10 minutes before serving. Mixture will be very hot in the middle so be careful! I suggest serving this with homemade vegan gravy. Makes 6 generous servings.

Happy Holidays EVERYONE! This is my paperless eco-friendly Holiday Greeting! I shared via email faebook, and twitter and now I am sharing it with YOU! I was able to reach over 600+ folks to send them my love and well-wishes (and hopefully give them a belly laugh when they see this heart-warming and hilarious pick of my girl, Sally Belle) without spending a penny. Isn’t technology amazing? And I don’t feel guilty for wasting trees.

I Have a Confession to Make…

I have a secret that I have been hiding for 6 months. It’s painful, embarassing, and there’s absolutely nothing left that I can do to change it. I am losing my home. Bank of America has started foreclosure proceeding on my home. I have recieved my court summons and I have to have my stuff out this week. I am 30 years old…I have a Master’s degree…I have worked hard my entire life…I always have more than one job, at least until this year…I am not lazy, on welfare, or any of the other judgements that people make…I am 1 of 4 million Americans that are currently losing their homes…I am the 99%.
I bought my very first home in 2006 just before the housing market surprised us all and plummeted. I paid my bills consistently and made major improvements on my home. I became unemployed on May 1, 2011 and the very next day I recieved a notice from Bank of America that my mortgage was going to increase $100 per month due to my variable interest rate loan. This was distressing news but I didn’t panic, I just began a feverish job search. I live in rural KY where there are few job opportunities when the economy is strong, so now things are impossible. After several months with no luck and not making my payment, I contacted Bank of America to look at my options. It turns out that despite President Obama’s many efforts to provide homeowner’s with assistance and to decrease the number of foreclosures, banks are not required to offer these programs. Bank of America said that they could decrease my payment and I could “apply” for their assistance program. I read reviews online and made some phone calls and EVERYONE I talked to that had applied for this program accepted the decrease in payments only to be informed 6 – 18 months later that they did not meet the eligibility requirements and that the balance was due on their account. If these folks could not come up with the balance, which consisted of the discounted amount of their monthly mortgage for the past 6 -18 months plus late fees, many had to foreclose anyway!!! This is tragic since foreclosure does not guarantee the homeowner won’t owe money – it only means that they may owe less. If they can’t get out of the house what the homeowner owes, the homeowner still has to pay the difference. With all of this information floating around in my brain, I gave the situation careful consideration and decided my best option is to file for bankruptcy and give up my home. I have always had excellent credit but a foreclosure would ruin it anyway so I might as well make certain that, if I can’t save my home, at least I won’t owe Bank of America a debt.
I visited an attorney to learn that filing for bankruptcy will cost a whopping $1200 that I do not have. So, I focused on finding a job (anything…at this point I will work fast food or retail) to fund my bankruptcy. I had several garage/yard sales getting rid of furniture and other belongings that I may not have room for any longer and simultaneously making a little money to feed myself and my loveable Beagle/Basset, Sally (see below). I also have a shop on Etsy that has helped make ends meet and for that I am so thankful. I am most thankful that I have a friend who let me and Sally move into the upstairs of her home so that we would not have to move in with my parents who live 3 hours away. I have not lived with my parents since leaving for college at 18, so I can’t explain to you, Gentle Reader, the difficulties that would have accompanied such a decision. My parents no doubt would have made a place for me but it would have been a shameful event for all concerned. Where I am from, filing for bankruptcy and losing your home are very shameful things.
Through this experience I am learning much. I am learning more about what is REALLY important to me….less stuff makes room for more experiences…only true friends make room for you in their homes and their lives…there is no shame when you know you have worked hard and tried your best…good doesn’t always triumph over evil…change is my responsibility as much as anyone else’s… and, finally, life is what I make of it. I can feel sorry for my misfortune or I can get up, be thankful for all I still have, and keep fighting. I always wanted a Ph.D. so perhaps this is my chance to go after it. There is nothing holding me here now so I have no excuses. Whew! I feel a little better. Afterall, secrets can be toxic.
